This Cool Summer Herbal Pasta Salad is a delicious dinner dish that combines garden fresh veggies like cucumber, peas and broccoli with a gluten free quinoa and corn penne and then tops it off with a tangy green sauce of lime, cilantro, mint and garlic. Enjoy!
INGREDIENTS
For the Pasta Salad
- Quinoa and corn penne
- Fresh cucumber
- Yellow pepper
- Peas
- Chopped cilantro
- Steamed broccoli
For the Green Sauce
- 3 tablespoons hemp seeds
- Juice of 2 limes
- 1/2 bunch cilantro
- 1 small bunch mint
- 1/4 cup water
- Garlic powder
- Salt
- Lemon pepper seasoning
DIRECTIONS
- Add the pasta salad ingredients to a medium to large bowl.
- For the sauce, place all ingredients in a blender of your choice and blend until creamy.
- Drizzle the sauce over your salad.
- Enjoy!
